No Bake Cookies

 Growing up my mom made the best cookies.  One of my all time favorites was her no bake cookies.  When I was a kid I could eat quite a few, but now they are so rich that I can only eat one or two, with a large glass of very cold milk.  Every time I make these it brings back memories of watching and waiting in the kitchen while my mom make them.  

These cookies are pretty easy to make, but they are also easy to make dry, so you want to make sure you do not over cook.

 

      I like to pre-measure all of my ingredients and have them ready before I start.

Start by bringing 1 stick of butter, 1/2 cup milk, 2 cups of sugar and 1/2 cup cocoa to a boil.  

Boil for 5 minutes, remove from heat and then add 3 cups of quick cooking oatmeal, 1 teaspoon vanilla and 1/2 cup creamy peanut butter.

Mix together.  If the mixture seems too dry, add a couple of tablespoons of milk. Drop by spoonfuls onto wax paper.

  1. 1/2 cup (1 stick) butter or margarine
  2. 1/2 cup milk
  3. 2 cups sugar
  4. 1/2 cup cocoa
  5. 3 cups quick cook oatmeal
  6. 1 tsp vanilla

Instructions
  1. In a heavy saucepan, combine the butter, milk, sugar and cocoa.
  2. Bring to a boil, and boil for for 5 minutes.
  3. Remove from heat and add oatmeal, peanut butter and vanilla.
  4. Mix together.
  5. Drop by spoonfuls onto wax paper.
Notes
  1. I have found that cooking time is usually anywhere between 3-5 minutes, to a soft ball stage.
  2. If the mixture seems too dry, add a few tablespoons milk.

Ingredients
  1. 2 cups Granny Smith apples, peeled and diced
  2. 1 cup celery, chopped
  3. 1/2 cup walnuts, broken
  4. 1/2 cup Cool-Whip
  5. 1/4 cup mayonnaise
  6. 1 Tbsp sugar
  7. 1/2 tsp lemon juice
Instructions
  1. In a medium to large mixing bowl, combine apples, celery and walnuts.
  2. In a small bowl, blend together mayonnaise, sugar and lemon juice.
  3. Gently fold in Cool-Whip.
  4. Fold dressing into apple mixture.
  5. Cover and chill.
Notes
  1. You could use another type of apple and you could also use them unpeeled, if you prefer.

Ingredients
  1. 2 cups uncooked elbow macaroni
  2. 4 Tbsp (1/2 stick) butter
  3. 2 1/2 cups cheddar cheese, shredded, divided
  4. 2 large eggs
  5. 1/2 cup milk
Instructions
  1. Preheat oven to 350 and grease and 8-inch square baking pan.
  2. Cook macaroni, following package directions, Drain well, return to pot.
  3. Add butter and still until melted.
  4. Add 2 cups of the cheese and still well.
  5. In a medium bowl, whisk eggs with the milk.
  6. Add the milk mixture to the macaroni. Stir until well combined.
  7. Spoon into the greased pan, sprinkle with the remaining 1/2 cup cheese.
  8. Bake, uncovered, for 30 minutes or until the cheese has melted and browned.
Notes
  1. Since I have a large family I always double this recipe.
  2. I bake it in a 9x13 baking pan 30 minutes.
